Hikidashi comes from a hundreds of years old Japanese firing process which involves firing to around 1240C at which when that temperature is reached, each piece is removed from the kiln glowing red hot using long metal tongs.  They are rapidly cooled in combustibles to change the glaze then placed in water. This technique renders the pieces totally functional.
